Chocolate Chip Muffins

Ingredients:

1 ½ cup flour

¾ cup old fashioned oats

1 Tbsp ground flax

2/3 cup sugar (can substitute 1/3 c erythritol + 1/3 c sugar)

3 teas baking powder

½ teas salt

8 oz vanilla Greek yogurt

¼ c milk (any variety)

½ teas vanilla extract

½ c unsweetened applesauce

3 Tbsp walnut oil

1 egg

1 c dark chocolate chips

Directions:

1. Pre heat oven to 350 degrees. In a mixing bowl, combine flour, oats, flax, sugar, baking powder and salt.

2. In a separate mixing bowl, mix yogurt, milk, vanilla, applesauce, oil, egg, and chocolate chips.

3. Pour the wet ingredients into the dry and mix just till all is combined and moist.

4. Line cupcake pans with cupcake liners. Scoop about a ¼ c of muffin mix into each cup.

5. Bake at 350 degrees for 20 minutes or until toothpick inserted comes out clean.

6. Take muffins out of pans, cool completely and enjoy with your favorite beverage.
